Fruit salads

Melons and watermelons fruit salad

Ingredients
50 watermelon, melon 50, 45 plum, grapes 45, 10 salad green, sour-cream sauce for fruit salads 60.

Salad from apples, tangerines and prunes

Ingredients
50 apples, tangerines 30, 10 celery, prunes 30, 20 sour cream, mayonnaise 20, powdered sugar 2.

Fruit salad

Ingredients

Salad radish with egg in sour cream

Ingredients
Radish (white or red) 100, 20 eggs, sour cream 30, dill.

Delicacy salad

Ingredients
50 Tomatoes, cucumbers 30, 35 asparagus, beans (pods) 20, 20 green peas, cauliflower 20, 10 green salad, salad dressing or mayonnaise with sour cream 50, pepper, dill.
Cook separately cauliflower, asparagus, green beans and cool in the same broth. Divide the cauliflower into small florets. Asparagus cut into small slices, green beans and salad - into pieces, cucumbers and tomatoes - thin slices. Ingredients carefully mix, season salad dressing or mayonnaise sauce with sour cream, salt, pepper.
Lay in a salad bowl and garnish with vegetables, chopped in the form of figures, and sprinkle with dill.

Beetroot salad

Ingredients
150 Beetroot, horseradish 30, vinegar 3% 20, 10 vegetable oil, sugar 5, 0.5 lemon peel, cinnamon, cloves, bay leaf and pepper to 0.02.
Baked or cooked in the skin of the beets clean, chop into strips or thin slices, put in layers in a porcelain or earthenware dish, pour each layer with grated horseradish, pour the cooled marinade and leave for 2-3 hours. Before serving the salad put the slide in a salad bowl, sprinkle with sugar and pour vegetable oil.
For the marinade in vinegar, add cloves, cinnamon, lemon zest, Bay leaf, pepper peas, bring to a boil in a sealed container, cool and strain.

Salad of potatoes and corn

Ingredients
100 Potatoes, lactic ripeness boiled corn (grain) 80, 15 green onions, vegetable oil 15, vinegar 3% 15, 5 sugar and pepper.
Boil potatoes, cool, peel and cut it into thin slices. Corn cobs cook whole in salted water. With ready-cut cobs of grain, cool and mix with the potatoes.

Salad of pickled red pepper, green peas and rice
Ingredients
100g rice, 5-6 pods pickled peppers, 100g green peas, 1 egg, 2 tbs. vegetable oil, 1 tbs. vinegar, salt, sugar - to taste.
Canned red peppers cut into long thin strips. Boil the rice, wash it, that was not sticky. Put the chopped pepper to the rice, add green peas, fresh or can be preserved with salt.
Fill the mixture of vegetable oils, sugar and vinegar.Put salad slide, decorate with slices of boiled eggs, sprinkle with herbs.

Crab salad
Ingredients
Crabs 50, 20 egg, green salad 30, 15 carrots, potatoes 30, cauliflower or apples 25, peas or green beans 15, 20 tomatoes, salad dressing 15, 40 mayonnaise sauce, olives 10.

Сrabs marinate for a few minutes in salad dressing. In the middle of the salad bowl or a vase to put a slide sliced seasoned green salad or a mixture of vegetables, diced (1/3 of the total number) and dressed with mayonnaise and crab on them.
Around the hill lay heaps garnish: mug eggs and boiled carrots, boiled cauliflower or slices of apples, peas or green beans, tomatoes and lettuce.

Salad 'Rassols' | Latvian version
Ingredients
100g of boiled meat, 100g of potatoes, 100g of herring fillets, 2 cucumbers, 3 eggs, 1 apple;
For the filling: 200g sour cream, 100g of mayonnaise, 1 tsp. mustard, 1 tsp. horseradish, 1 tsp. vinegar, salt to taste.

This salad is very popular in Latvia. The presence in a salad of meat and potatoes makes it hearty, able to replace the second dish.
To prepare the salad boiled beef or pork, you can take the shopping ham. The meat cut into small slices. Herring clean from the bones and cut into fillets. Boiled potatoes cut into cubes, and chopped pickles. Boil eggs and chop. Fresh apple peel and cut into cubes. Fold in a large bowl of sliced products, season and mix.
For the filling mix the sour cream with mustard, vinegar, grated horseradish, salt and add the mayonnaise.

Salad wildfowl, asparagus and celery
Ingredients
Cooked wildfowl 60, 50 asparagus, green beans 20, 20 celery, potatoes 20, mayo 60, 40 eggs, 10 lettuce, pepper.

Salad of celery, apples and nuts
Ingredients

Salad 'Boker'
Ingredients

Extremely tasty and easy to prepare French salad made from vegetables, mushrooms and ham. Prepare the vegetables: beets, boil and chop finely. Apples cut into slices, ham and mushrooms - straws.

Plantain weed salad with nuts and honey
Ingredients
200 g of plantain weed leaves, 1 tbs. of nuts, 1 tbs. of honey, 1 tbs. of vegetable oil.

Salad of calendula flowers, radish and grapefruit
Ingredients
20 g of calendula flowers, 1 orange, 1 grapefruit, 1 avocado, a handful of rocket leaves, a little of germs of radish; For the sauce: ½ cup orange juice, 1 clove garlic, 2 tbs. sesame seed paste, 1 tbs. agave syrup (you can replace ordinary sugar syrup), 5 pcs. calendula flowers.

Grapefruit and orange separated from the membrane cut slices into small pieces. Rocket leaves mixed with slices of citrus.
Add sprouts radish. Cover with slices of avocado and calendula flowers. Salad season with sauce. 
On top put slices of avocado and sprinkle with calendula flowers.
Preparation of the sauce: mix all ingredients and beat until smooth.

Bean salad with pickled cucumber and apple
Ingredients
1 cup dry beans, 1 egg, 1 pickled cucumber, 1 apple, salt, pepper, 50 g sour cream.

This salad is a good cook in the winter. He is very rich. Dry beans, first soak for several hours in cold water to speed up the cooking time, then boil in unsalted water until done, cool.
To add the beans cut strips apples, pickles. Onions cut into rings and chop the boiled egg.
All products are mixed, add salt, pepper and sour cream.

Cauliflower salad, tomatoes and herbs
Ingredients

Pineapple salad with celery
Ingredients
75 fresh pineapple, celery 75, 15 Green salad, beets boiled 20, vinegar 3% 15, 20 vegetable oil, powdered sugar 20, pepper.
Celery (tops, root) and the pineapple cut into strips. Season with vinegar, oil, salt, pepper and sugar.
When serving put in a salad bowl on green lettuce leaves and garnish with slices of boiled beets.

Celery salad and vegetables with peanut sauce
Ingredients
Celery (root) 40, 40 cucumbers, tomatoes 30, 15 salad, walnut sauce (Satsivi) 30, dill. For the sauce: broth 450, melted butter or chicken fat 100, walnuts (core) 200, onion 300, flour 30, eggs (yolks) 5 pc., garlic 30, wine vinegar 100, cloves 2, cinnamon 2, red pepper.

Preparation of sauce
Finely chopped onion fry lightly with oil or grease, remove from chicken broth, then add flour and continue sautéing for a few minutes, stirring with a wooden shovel. In this mass pour the hot strained broth and simmer for 10-15 minutes at the boil.
Crush the kernel of a walnut and garlic, add the crushed cloves, cinnamon, red pepper, egg yolks, vinegar. Mass rub the blade and, stirring, heat, add the prepared mixture, not boiling. Ready sauce to cool.
Cut into small strips processed celery and peeled cucumbers and tomatoes - thin slices. Vegetables mix, lay heaped in a salad bowl on green lettuce leaves, sprinkle peanut sauce (Satsivi) and sprinkle with dill.

Vitaminic salad
Ingredients
Apples 35, 35 tomatoes, cucumbers 20, carrots (red layer) 15, 20 celery,  fresh seedless plums or cherries 15, lemon (for the juice) 1/4 pcs., 3 powdered sugar, sour cream 50, greens.

Raw carrots and celery salad, cucumbers and apples (without skin and seeds) cut into strips 2-3 mm thick, and fresh plums, and tomatoes - slices.
Mix products, sour cream, add salt, lemon juice and icing sugar. 
Post a slide in a salad bowl and garnish with products that are part of the salad, sprinkle with herbs.

Salad with tongue, vegetables and apples
Ingredients
60 tongue, boiled potatoes 40, 20 carrots, apples (semi-sweet) 40, 45 eggs, 20 capers, anchovies (fillets) 15, beets boiled 20, 40 dressing salad, pepper, herbs.

Boiled tongue, carrots and potatoes, fresh apples without skin and seeds, egg (1/2 pcs.). Cut into slices, add capers, season with salt, pepper, salad dressing and mix.

Salad Spring
Ingredients

Ingredients

By delicacy sauces, different sharpness spice taste and aroma, is a group of soy sauces, of which sauce "Southern" - one of the most common. Also enzymatic soy sauce, which include: applesauce, tomato paste, salt liver, vegetable oil, a variety of spices and herbs, onions, garlic, raisins, vinegar and Madeira.
This sauce is used for fish, meat and vegetable dishes, widely used for oriental dishes, it added to the red sauce culinary production.
Boiled sturgeon and other fish and potatoes, canned cucumbers (gherkins), and hard-boiled eggs, cut into slices 2-2.5 cm, and a green salad - apart. Season with mayonnaise sauce, to taste add the sauce "Southern" and salt. Ingredients

Vegetable salad with anchovies
Ingredients
15 Carrots, turnips 15, 15 potatoes, beans (pods) 10, 10 green peas, capers 10, olives 20, 20 eggs, anchovies (fillets) 15, 30 mayonnaise, pepper, herbs tarragon and parsley.

Cooked carrots, turnips, potatoes and green beans cut into cubes, add the peas, capers and chopped herbs tarragon and parsley.
Vegetables fill with mayonnaise sauce, salt and pepper.
