Rabbit dishes

Rabbit soup with rice

Ingredients
Rabbit 100, 10 carrots, onion 5, 10 Flour, rice 30, 5 celery, butter or cream margarine 10, 0.5 paprika, pepper.
Rabbit cut into pieces (2-3 pieces per serving) and fry in butter until then, until the rabbit is browned. Carrots and onions finely chop and fry, sprinkle with dried flour, paprika and saute for another 2-3 minutes, stirring occasionally. Rabbit and vegetables pour broth or water, add celery stalks, peppercorns, salt and cook at low boil 1 hour, removing appearing on the surface of the foam.
Boil rice separately in salted water. At the end of cooking soup to filter through a sieve. Serve with pieces of rabbit and rice.

Rabbit baked with egg

Ingredients
Rabbit 100, 150 potatoes, melted butter 5, eggs 1 pcs., 30 sour cream, green onions 10.
The rear legs and kidney area of a carcass to roast in the oven until tender, then separating the bones, slice the meat across the grain into thin slices, 3-4 per serving. On the bottom portion of the greased pan put a layer of sliced boiled potatoes, and on them slices of meat, which again cover with potato slices. Raw egg mixed with sour cream and chopped green onions, season with salt. Pour this mixture into the meat with the potatoes and bake in the oven.
You can also cook rabbit with crumbly rice, wheat or buckwheat porridge, boiled pasta, noodles or beans.

Rabbit baked with cabbage

Ingredients
Rabbit 100, melted butter 5, 15 onions, 50 sauce, braised cabbage or potatoes 150, 5 cheese, crackers 3.
Boiled or roasted rabbit meat cut across the grain into thin slices weighing 4-5 grams, put in a saucepan, add the finely chopped browned onions, red sauce or tomato, stir, boil and add salt.
Meat dressed with sauce put into serving pan, cover it with a layer of cabbage or slices of boiled potatoes, mashed potatoes or mashed beans, sprinkle with grated cheese, mixed with crushed crackers and drizzle with melted butter and bake in the oven to form on the surface golden brown. Submit meat in the same pan in which it was baked.

Vegetable pudding
Ingredients
Potatoes 100, cabbage 50, 75 carrots and turnips, cauliflower 50, 20 green peas, semolina 20, 40 milk, 1 egg, butter 15, 5 cheese, sour cream 30.

Carrots and turnips, cut into small cubes, and chopped cabbage simmered. Cauliflower boil and rub. Potatoes, cut into small cubes, lightly fry. Prepared vegetables and canned or cooked green peas combine with cooked in milk semolina and add beaten eggs.
Mix thoroughly and spread the mixture in portions molds or on a baking pan, greased and sprinkled with breadcrumbs. Sprinkle with grated cheese, drizzle with oil and bake. 
This pudding can be boiled steamed, and cheese in this case should not be sprinkled.
Submit pudding with sour cream.

Spinach baked in potato baskets
Ingredients
Spinach 50, potatoes 150, eggs 1/3 pcs., butter 20, 100 sauce, 10 cheese, pepper.

Boiled potatoes in water slightly dry, pass through a sieve or wiping the machine, add the butter, raw egg yolk, salt, pepper and stir. Seasoned mashed release on a greased baking sheet or a la carte meal in the form of boxes open on one or two pieces per serving, brush them with egg and bake in slightly ovens.
Boxes filled with stewed pureed spinach.
Then pour the hot milk sauce of medium thickness, sprinkle with grated cheese, drizzle with oil and bake until Golden brown.

Potato soup with dried mushrooms and prunes
Ingredients
125 Potatoes, onion 15, dried mushrooms 4, prunes 15, 10 refined sunflower oil, flour 5, 20 raisins, lemon 1/10 pcs.

Finely chop cooked mushrooms and put them in the strained mushroom broth, onion, finely chopped, fry in vegetable oil, add flour and continue frying for 4-5 minutes, then combine with mushroom broth.
Bring soup to a boil, add the potatoes, cut into slices, prunes, raisins and cook until tender.
Serve with slices of lemon and herbs.

Potatoes baked by Savoy
Ingredients
600g of raw potatoes, 250g of milk 3 eggs, 50g of cheese, salt - to taste.
Potatoes peel and cut into thin slices. Lay potatoes in a baking dish. Whisk milk with eggs, season with salt and pepper, add the grated cheese. Mass mix well and pour over potatoes. Bake in the oven.
We recommend you to try to cook the potatoes in Finnish and potatoes in Spanish.

Hunter's potato gnocci
Ingredients
300g potatoes, 200g mushrooms, 2 onions, 200g of milk, salt, pepper, parsley.

Potato boil in "jacket", peel and mash. The potatoes pour the hot milk, add starch, salt, pepper. Mushrooms finely chop, dried mushrooms soak, and simmer. Mix potatoes, mushrooms and onions, add the greens and stir.
From the mass of the mold gnocci and boil in salted water until tender. Remove with a slotted spoon, let the water drain out. 
Serve with sour cream.

Chowder in a pot | Archangelsk version
Ingredients
300g meat (beef or chicken), 40g of dried mushrooms, 300g potatoes, 200g fresh tomatoes, 2 onions, 50g butter, 0.5 l of mushroom broth, greens.

Cook any meat until half cooked. Dried mushrooms pour water and boil. In the prepared pots to put the pieces of meat, pour mushroom broth, add pepper and leave to simmer in the oven.
15 minutes before end of cooking in a pot put the boiled mushrooms, potatoes, raw onions. 5 minutes before end of cooking put a fresh tomatoes cut into slices. 
When serving in a pot put butter and herbs.

Potatoes in Spanish
Ingredients
500g potatoes, 100g onion, 1/2 lemon, 3 egg yolks, 100g of cottage cheese or cheese, 2 tbs. vegetable oil.

Boil the potatoes in their skins. Onions finely cut and pour lemon juice and let stand for 15-20 minutes. Beat the egg yolks and vegetable oil.
Cottage cheese or cheese minced and mixed with red pepper. Mix cottage cheese with pickled onions and egg yolks. 
Potato peel and pour the resulting mixture. Bake in the oven at 180 °C.
We recommend to cook the potatoes in Finnish and potatoes in Savoy.

Potatoes in Finnish
Ingredients
600g potatoes, 300g of fresh herring, 1 onion, 200g of milk, 2 eggs, 2 tbs. vegetable oil, 1 tbs. flour, salt.

Peel the potatoes, cut into thin slices.
Layers of potatoes, onions and fish sprinkle with flour and pour the vegetable oil. Put on low heat, simmer, covered. Prepare a mixture of milk and eggs, beat until smooth.
Pour this mixture of potatoes with fish and bake in the oven under the lid closed.

We recommend you to try to cook the potatoes in Spanish and potatoes in Savoy.

Potato croquettes, baked with salad
Ingredients
250 Potato, salad 35, eggs 1/4 pcs., wheat flour 5, 10 crackers, sour cream 25, salt 3.
Exit 300. Protein 6, 7 fat, carbohydrates 59, 336 calories.
Boil the potatoes, add the eggs and wiped.
Chop salad, simmered with sour cream (10g). From mashed potatoes, mixed salad, to cut croquettes and roll them in the breadcrumbs.
From a flour, fry without oil, cook the sauce with the addition of sour cream. Croquettes pour sauce and bake.

Potato croquettes with meat
Ingredients
Potatoes 300, 20 eggs, pork 75, 30 onions, lard 20, wheat flour 10, crackers 20, 25 cream, pepper.

For the preparation of minced raw pork mince, add salt, pepper and fry the onions.
Raw potatoes grate, and discard in a sieve. When the liquid is drained, add the raw eggs, salt and mix.
From the potato mass formed into small balls, stuff with their raw meat, roll in flour and moisten with the egg, roll in breadcrumbs and fry in fat, then put in a saucepan, pour the fat and cook. 
Served hot with whipped cream.

Baked potatoes with ham and mushrooms
Ingredients
Potatoes 200, 30 ham, mushrooms 50, 25 onions, flour, 5, 30 sour cream, broth 100, butter or lard melted 15, 10 cheese, greens.

Slice the onion into strips, mushrooms and fry separately in butter.
All this mix, add sour cream, chopped ham, broth, flour and simmer for 10-15 minutes.
Boiled potatoes cut into large cubes, put on a greased pan a la carte from the ham, pour the cooked ham and mushroom mixture, sprinkle with grated cheese, drizzle with butter and bake in the ovens. When serving sprinkle with parsley.

Potato soup with meatballs
Ingredients
175 Potatoes, carrots 20, parsley 5, 20 onions, tomato puree 5, 5 table margarine, herbs;
For meatballs: beef, lamb or pork 57, 5 onions, eggs 4, 5 water and pepper.

The roots slice or cubes, chop the onion, add the tomato puree and fry all together on fat. Potatoes cut into cubes.
In the boiling broth or water to put roots, bring to a boil, add the potatoes and cook for 15-20 minutes. At the end of cooking the soup with salt.
Meat miss a few times through a meat grinder, mix with finely saute chopped onions, softened butter, raw eggs, salt and pepper (you can pour 10-12 grams of cold water). To cut meatballs in the form of balls of 8-10 g and cook in the broth, or salted water 5 to 6 minutes.
Cook the meatballs in a potato soup. Serve the soup with greens and meatballs.

Potato patties with meat
Ingredients
Potatoes 250, 8 eggs, beef 40 or liver 40, 5 onions, wheat flour 5, 10 fat, 5 butter, sugar 5.

Hot boiled potatoes through a meat grinder, add the eggs, salt and mix. From the resulting mass of molded potato round cakes, put them on the ground beef patty and make semi-circular shape. Pies breaded in flour and fry. Served hot with butter.
Just cook potato cakes with cabbage or sauerkraut fresh. Fresh cabbage chop and fry in a pan with the fat, then season with salt, add the fry onion, raw egg and mix. Sauerkraut stew with onions and fat, then season with sugar.
